For those on the go, (or for those of us that just had a baby!) these are the best snacks to have in the freezer. Loaded with protein and so much satisfying flavor, these bites are sure to curb that hunger and provide you with a boost of energy. The chocolate and dried fruit also makes it a healthy sweet-tooth option.
Ingredients
- 1 cup Old-Fashioned Oats
- 2/3 cup Shredded Coconut
- 2/3 cup Nut Butter (I use Almond)
- 1/4 cup small Chocolate Chips
- 2 tbsp Local Honey
- 1 tsp Vanilla Extract
- 1/4 cup Dried Fruit, chopped (raisins, cranberries, cherries, dates, …)
- 1 tbsp Cinnamon
- pinch of Salt
In a large bowl, mix all the ingredients together until thoroughly combined. Adjust the ingredient amounts as needed to obtain the correct consistency for them to bind. Some nut butters are less sticky, and therefore may require more to get the items to stick together. If they become too sticky, cover the mixing bowl and chill in the refrigerator for a half hour. This will make the rolling into balls and binding easier.
Roll the mixture into 1-inch balls and then store in an air-tight container. You can store them in the refrigerator for 1 week or in the freezer for up to 3 months… if they last that long!
