Silver Platter NB&J

I’m almost embarrassed to post this as an actual “recipe” but it’s just so darn delicious, I had to share it. We all know how to make a classic PB&J sandwich. Being probably the most classic meal that every kid & parent default to for lunch, it’s probably not what you think of when you picture a special breakfast. What if you were to tweak the ingredients ever-so-slightly though? Instead of Wonder Bread, slice a freshly baked hearty loaf of bread. Spread your favorite nut bread, whether it be peanut, almond, cashew or sunflower. Sprinkle with cinnamon, perhaps even a drizzle of local honey. Then, instead of using a processed, sugar-loaded jam, top the bread with fresh picked raspberries. Now my friend, you have the best thing since sliced bread, worthy of a silver platter!

Being a peanut-free home, we keep a collection of different nut butters. Almond is our go-to but we do shake it up with others. Our latest discovery is Sunflower Butter, which is super tasty! The brand we found, SunButter, highlights that is is free of the top 8 food allergens – peanuts, tree nuts, soy, milk, eggs, wheat, shellfish, & fish.

Ingredients

  • Hearty Sliced Bread
  • Nut Butter
  • Cinnamon
  • Fresh Raspberries

Slice the bread and toast until golden brown. Spread your favorite nut bread, whether it be peanut, almond, cashew or sunflower. Sprinkle with cinnamon. Next top with several fresh, ripe raspberries. Gently smush them and spread over the bread. If you desire more sweetness, drizzle with local honey. Enjoy it as an open-face sandwich, fold in half or top with another piece of toasted bread.
