As much as I would love to have homemade baked goods every morning for breakfast, it is not going to happen. But this flavor-packed, hearty breakfast will fix my cravings! The nutty flavor of the quinoa is enhanced as it soaks up the sweetness of the maple syrup & cinnamon. And it’s hard to argue the flavor combo of banana & walnut. All together, with the creaminess & the crunch, this dish makes for a super delicious & filling start to your day. Make the quinoa the day before to speed up the process in the morning.
*Since the initial post, I have added a small amount of warmed coconut milk to the quinoa to make it even creamier – extra yum! It’s definitely not necessary, but it does make it more of a winter morning comfort breakfast.
- 1 Cup Quinoa
- 1 Sliced Banana, per breakfast bowl
- Handful Walnuts, per breakfast bowl
- Couple Dashes of Cinnamon
- 2 Tablespoons All Natural Maple Syrup, per bowl
- Salt to taste
Cook the quinoa as instructed on the box. Once cooked, fluff and add cinnamon and salt to taste. Scoop desired amount of quinoa into your breakfast bowl (1 cup of quinoa will go a long way!). Drizzle in the maple syrup, mixing well. Top with the banana and walnuts. Serve warm.
