Toddler Banana Pancakes

Now that I have a toddler in the house, we are adding new recipes to our collection. These banana pancakes are one of our little guys favorites. They’re easy to make, reheat easily, and they are a great, soft food for beginner eaters. Adult approved as well!

Ingredients

  • 1 Ripe Banana
  • 2 Eggs
  • Pinch of Cinnamon
  • Vegetable Oil, drizzle
  • 1 tsp Vanilla Extract (optional)

In a small bowl, mash the banana into a paste. Add the eggs and mix well. sprinkle with cinnamon and a splash of vanilla extract, if desired. Using a small scoop (I used an old baby formula scoop), place small dollops of the pancake mix onto a skillet that is lightly greased with oil over low to medium heat. Flip carefully when the edges start to brown. When cooked through, set aside and repeat with all the batter.
