I eat instant oatmeal almost every morning at my office desk. It’s convenient, and it’s good. But my weekday breakfast could be better. Much better. So I turned to Pinterest for inspiration on quick, easy & delicious breakfast ideas. I’m not sure why I had been intimidated in the past by overnight oats, but this time around, I decided I would give it a try. And boy am I glad I did! There is nothing complicated about it, and the flavor combinations are endless! I’ve been experimenting with all kinds of creations, but this autumn treat is my current favorite. Apple pie for breakfast? Yes, please! The sweetness of the apples & caramel and the crunch of the almonds, combined with the warm cinnamon flavors…., you are transported to a cabin surrounded by nature’s masterpiece of fall colors all around. Work, what?
Ingredients
- 1/2 Cup Old Fashioned Oats
- 1/4 Honey Crisp Apple, diced
- 1/2 Banana, mashed
- 3/4 Cup Vanilla Almond Milk
- 1 Tablespoon + Sliced Almonds
- Several Dashes Ground Cinnamon
- Splash Vanilla Extract
- 1 Tablespoon Raw Honey
- 1 Tablespoon + Caramel Sauce
- Pinch of Salt
Combine all the ingredients together well in an airtight container and refrigerate over night. When ready to serve, mix again, adding more milk if necessary. Place in a microwave safe container, and heat to desired temperature, about 1 minute. Drizzle with extra caramel and cinnamon for extra special touch!
