No Bake PB & Chocolate Oat Clusters

I’m always looking for  new dessert creations that do not require precise measuring!

This recipe was inspired by a recipe I came across on Pintrest.com.

Ingredients

  • 1 Stick Butter
  • 2 Tablespoons Sugar
  • 2 Tablespoons Honey
  • 4 Tablespoons Cocoa Powder
  • 1.5 Cups Rolled Oats
  • 3 Tablespoons All Natural Creamy Peanut Butter
  • Sliced Strawberries for Garnish
In preparation, line a tray with parchment paper and have a small ramekin ready for shaping the no-bake clusters.
In a medium size sauce pan, melt the stick of butter over medium heat, careful not to burn the butter. Once the butter is melted, turn the heat down slightly and add the sugar, honey, coco powder and peanut butter. Once they are combined and smooth, mix in the oats until they are completely covered in the chocolate, peanut butter mixture. Take off the heat, carefully fill the ramekin  with the mixture, and flip the shaped contents onto the parchment paper. Continue this process until all of the oat mixture is shaped into delicious clusters.  Let them cool enough so that the oats stick together, but they can either be eaten warm or after being chilled in the refrigerator. Garnish with fresh slices of strawberries!
