If you were to ask my friends where I eat the most during the week, it would be our local sushi restaurant. And if you were to ask our server there what I always order with my sushi, it would be a side of ginger dressing. I’m obsessed with it. No matter what roll we get, I have to dip it in ginger dressing. If you haven’t tried it before, trust me, and get it next time you’re out at a sushi place. With that said, I’m just a fan in general of the simple, fresh ingredients in your basic sushi rolls. I was home this past weekend, and when contemplating what to make for lunch, I realized I had a lot of the key ingredients for a sushi roll…minus the rice and roll. So instead, I made a sushi inspired salad! Let me tell you, it was beyond delicious.
Ingredients
- 3 Cups Baby Spinach
- 1/2 Cucumber, sliced
- 1 Handful Shredded Carrots
- 1/2 Avocado
- Smoked Salmon
- Ginger Dressing, such as Makoto
- 2 Green Onions, diced, green part only
- Salt & Pepper, to taste
Chop the cucumber & green onion, and slice the avocado. Place the spinach and shredded carrots into a large bowl. Add the ginger dressing, spoonful at a time, and toss until there’s enough dressing to your liking. Top with the cumber, green onion, avocado and smoked salmon. Season with salt & pepper. Yum!
