Garden Green Guac Bagel

Below my office is a great little juice bar that I frequent often. As their business grew, they were encouraged by their patrons to start carrying healthy lunch items. I had ventured down one day and they had just added healthy grain bagels to the menu. The girl behind the counter and I looked over their produce for the day and came up with this delicious creation. We used guacamole in this version, but we’ve also gone as simple as just cream cheese, avocado, & cucumber drizzled with lime juice.

Ingredients

  • 1 Whole Wheat Bagel, sliced and toasted
  • 1/2 Cucumber, sliced
  •  Red Hot Guacamole or 1 Avocado, Sliced
  • Handful of Broccoli Sprouts
  • 1 Leaf of Romaine Lettuce, chopped in small slices
  • 2 Baby Sweet Peppers, red & yellow, sliced
  • Red Onion, few small slices
  • Cream Cheese, optional
  • Fresh Lemon Juice, 1 Lemon
  • Fresh Lime Juice, 1 Lime
  • 1/2 Teaspoon Cayenne Pepper
  • 1/2 Teaspoon Sea Salt

With a small pairing knife, slice small slivers of the peppers, romaine, and red onion. Cut the cucumber into 1/4 inch think discs. Set aside.

Prepare the Red Hot Guacamole, or slice a ripe avocado into thin strips. Set aside.

In a medium size bowl, mix the sliced peppers, red onion, romaine and broccoli sprouts. Drizzle with the lemon and lime juice. Season with the cayenne pepper and sea salt. Mix well.

Toast the bagel until lightly browned. Spread each bagel with the guacamole. If you don’t have guacamole, spread cream cheese on the bagel and top with the sliced avocado.

Lay the sliced cucumber on top of the guacamole. Top with the mixed vegetables and greens.
