Grilled Thyme Tomatoes

Summer tomatoes are so full of flavor, and therefore do not require much, if anything, to be a delicious addition to a meal. By simply grilling them and adding fresh thyme, they are easy and healthy. We ate them with grilled chicken and Healthy Tzatziki Sauce on pita – yum!

For serving sizes, plan for around 3 slices per person and a pinch of thyme leaves per slice.

Ingredients

  • Large Tomatoes, Sliced
  • Fresh Thyme Leaves
  • Olive Oil
  • Salt & Pepper

Start the grill and get it hot. Slice the tomatoes a quarter of an inch-thick, and then season with olive oil, salt & pepper.

Place the tomatoes on a grill pan and grill for around 5 minutes, or until they start to char. Take them off the heat, and then season with fresh thyme leaves. Serve hot or room temperature.

      You’re welcome!! I actually made the tzatziki over the 4th, but have purchased it in the past as well. I’ll post the tzatziki recipe too! Let me know how your tomatoes turn-out, and if you have any suggestions!
