Cheesy Broccoli Casserole

Traditional family Christmas recipes are the best. This particular one has been on my husband’s family Christmas Day dinner menu for decades. There is just something special about a recipe that comes out once a year….especially when it’s so good!

The casserole can be made earlier in the day and then baked just before dinner.

Ingredients

  • 2 10oz packages Frozen Broccoli, chopped
  • 2 Eggs, beaten
  • 1/2 cup Mayonnaise
  • 1 Can Cream of Celery or Mushroom Soup
  • 8-10oz+ Shredded Cheddar Cheese
  • Salt & Pepper, to taste

Cook the broccoli according to the packages instructions – don’t overcook so it won’t get mushy.

Preheat the oven to 350 degrees. Prep a 13×9 inch backing dish with either butter of Pam Spray. In a large bowl, mix the eggs, mayonnaise, cream of soup, cheese, salt & pepper together well and then add in the cooked broccoli. Spread the mixture into the prepped baking dish and then top with more cheddar cheese, salt & pepper. Bake uncovered at 350 degrees for a half hour or until the sides start to bubble and the top starts to brown.
