Going with the theme of cooking from my pantry, I found items that could transport us, at least in the culinary-sense, to the shores of Hawaii. The sweet flavors of both the sweet potato and the pineapple transform the earthy rice. Not only do the sweet potato and pineapple add incredible flavor to the rice, they add a ton of nutrients. Sweet potatoes are known to be a great source of fiber, vitamins and minerals, as well as antioxidants that promote gut health. Pineapples are also very nutritious, containing diseases fighting antioxidants and there is even evidence that they may help prevent cancer and even help fertility. So give your body a boost and your mind a vacation!

Ingredients
- 1 cup White Rice
- Frozen Pineapple, diced
- 1 Sweet Potato, diced
- Coconut Oil
- Salt, to taste
- Optional: Shaved Coconut
Cook the white rice as per the products instruction. Cut up the sweet potato into small pieces and then sauté in the coconut oil over medium heat. Let them brown a bit, but not burn. Turn down the heat and add the pineapple. (I usually find the frozen chunks are a bit big, so I cut them down into bite-size pieces.) Cook over low heat for a few minutes. Once the rice is done, mix all the items together and season with salt. Serve with fish or chicken.
