Smoked Salmon Arugula Salad

I used to be intimidated to be in charge of making the salad. Seems silly, but it’s the truth. When I first started cooking, I often found my salads to be bland. Especially compared to my Mom’s salads (people talk about her salads). One night I was helping my Mom put dinner together, and I finally asked what her trick was to making such successful salads. The answer – don’t hold back. Now this doesn’t mean make a salad dressing soup, but it does mean load the salad up with delicious ingredients. Add the dressing slowly (the dressing will go far), and mix well! So measure with your eyes, stomach and tastebuds. You won’t go wrong!

Ingredients

  • Arugula
  • Broccoli
  • Sundried Tomatoes
  • Smoked Salmon
  • Sliced Almonds
  • Shaved Parmesan Cheese
  • Fresh Dill
  • Garlic Expressions Vinaigrette
  • Salt & Pepper

In a large bowl, add the arugula, chopped broccoli, sundried tomato slivers, sliced almonds, shaved parmesan cheese, and fresh dill leaves. Pour the Garlic Expression, or your favorite olive oil based dressing, into a soup spoon before drizzling over the salad. Mix well and continue until there is enough dressing to your liking. Season with salt & pepper, and then top with smoked salmon.
