A DIVA Brunch is not complete without this dish. Neither is Christmas Eve Dinner.
- 2 large bags frozen Hashed Brown Potatoes
- 2 cans Cream of Potato Soup
- 1 pint + low fat Sour Cream
- 1 bag + shredded Cheddar Cheese
- ½ cup + Parmesan Cheese
- Salt & Pepper, to taste
Combine all the ingredients, mixing well. Place mixture in a 13 x9 baking pan. Sprinkle Parmesan and cheddar on top as well. Bake covered at 350 degrees for one hour. Uncover and bake for an additional 10 minutes, or until the edges start to crisp. The casserole can be made a day in advance, but bake just before serving.
