I made this up one day on a whim when trying to create a side dish for a family lunch. Not only was it all consumed quickly, I was asked to make it again soon. The dish can be served warm aside an entrée or it’s also delicious as a cold salad.
Ingredients
- 1 tsp Soy Sauce
- 2 tbsp Balsamic Vinegar
- 1/2 tsp Honey
- 1/3 cup Olive Oil
- 1 tsp Dijon Mustard
- Salt & Pepper to taste
- 12 oz Green Beans
- handful Chopped Walnuts
- Shaved Parmesan to taste
Add the soy sauce, balsamic vinegar, honey, mustard and salt and pepper together and mix well. Next, stream in the olive oil while whisking together until well mixed and begins to emulsify. You could also add all the ingredients in a mason jar and shake until well mixed.
Cook the green beans to desired doneness in a pot of boiling water. Once done, place in a bowl and toss with the dressing. Add the walnuts and once cool, sprinkle on the shaved parmesan. You can serve the green beans either warm or cold.
