One of our family’s go-to pastas in the summer is this Lemon Dill Angel Hair pasta. So easy, so fresh. We don’t really measure, but add to taste. The menu is rounded out with fresh lake trout and steamed vegetables.
Ingredients:
- 1 Box Pasta, such as Angel Hair
- Fresh Dill, chopped
- Lemon juice, 1/2 Lemon +
- Lemon zest, 1/2 Lemon
- M Salt, couple dashes
- 2 tbsp Mashed Garlic
- 1/4 cup Olive Oil
- Shredded Parmesan Cheese
In a small bowl, add about 2 tbsp mashed garlic, lemon zest of 1/2 a lemon, couple dashes of M salt, and lemon juice of 1/2 a lemon. Mix together. Slowly pour in olive oil and whisk with a fork until well combined.
Boil the pasta as directed on the box. When draining the pasta, save some of the starchy water in a coffee mug. Add the sauce to the pasta and mix well. Add the starch water as needed to the pasta – this will add moisture, stretch the sauce and help it stick to the pasta. Add more M Salt, lots of fresh dill, an extra squeeze of lemon juice, and shredded Parmesan cheese. Serve hot.
