Simple Tiramisu

My husband makes the most incredible Christmas Dinner Dessert… it’s an Eggnog Tiramisu Trifle. OMG. It takes him almost a full day to make it but it’s worth it… at least for me 😉 I highly recommend it. But usually around this time of year, I discover that a “just-in-case” package of ladyfingers remain. Since I don’t have his patience for measuring, I have come to create an easy tiramisu with some of his remaining ingredients. While it may not be up to his OMG Status, it’s still a really good tiramisu! And it’s much easier to make!

Ingredients

  • 1 package of Lady Fingers
  • 1 cup Heavy Whipping Cream
  • 1 cup Mascarpone Cheese
  • 2 cups Expresso or strong coffee
  • 1/4 cup Kahlúa
  • 2 tbsp Cocoa Powder
  • 1 tsp Vanilla Extract
  • 1 tsp Cinnamon

Pour the whipping cream into a medium sized bowl and mix with a hand-held electric mixer until the cream is stiff and forms peaks. In another bowl, mix the mascarpone, Kahlúa, cinnamon and vanilla until fully combined. Add the whipped cream and mix well until smooth.

Dip each ladyfinger into the espresso, taking care not to completely soak them. Line a 9×9″ square baking dish with a layer of ladyfingers. Spread half of the whipped cream mixture over the ladyfingers. Repeat the process with the remaining ladyfingers and cream. The top should be the whipped cream mixture. Chill covered for at least four hours but ideally overnight. Before serving, top with cocoa powder.
