Salmon Avocado Bird’s Nest

Salmon, Avocado, & Eggs…. does breakfast get any better? You’re never going to find a more impressive but easy breakfast dish.

Ingredients

  • 2 Whole, Ripe Avocados
  • 2-4 oz Smoked Salmon
  • 4 Eggs
  • Fresh Dill
  • Salt & Pepper, to taste
  • Pinch Red Pepper Flakes

Preheat the oven to 350 degrees. Half the avocados & remove the pits. Carefully scoop out some of the flesh, making the hole in the avocado slightly bigger. Line with the thin slices of smoked salmon. Crack the eggs into a bowl, and season with salt & pepper. With a spoon, ladle out the yolks and place gently into each avocado. Pour the egg whites into the avocado afterwards, if there is room. Sprinkle with more salt, pepper & red pepper flakes to taste. Bake for about 12 minutes, or until the eggs is cooked to your desire. Remove from the oven & add the fresh dill. Enjoy!
